Tricolore Pasta

If you have follow my blog and social medias for a while you would have noticed that I love making pasta from scratch. This time I made spinach, tomatoes & carrots.


This recipe yields 6 portions.


Ingredients:


200 gr. baby spinach

200 gr. cherry tomatoes

200 gr. carrots (peeled and chopped)

1 tablespoon of tomatoes paste

1 teaspoon of turmeric

450 gr. double zero pasta flour

Salt and Pepper


Directions:

  1. In a food processor add the spinach, and 150 gr. of flour, season with salt and pepper, blitz until a dough is formed. Set into a plastic wrap and let it rest.

  2. In the food processor add the cherry tomatoes, and 150 gr. of flour, season with salt and pepper, blitz until a dough is formed. Set into a plastic wrap and let it rest.

  3. Cook the carrots until soft in a pan with a bit of water, turmeric, salt and pepper. Let it cool and then add it into the food processor, with 150 gr. of flour, bliss until a dough is formed. Set into a plastic wrap and let it rest.

  4. Form short pasta shapes with the dough, boil and drain.



Tips:

  1. Sauté the pasta in some olive oil, garlic, chilli flakes and Parmesan cheese.

  2. Make a sauce with spinach, tomatoes and carrots and add the tricolour pasta, sprinkle some Parmesan cheese on top.
