Low Carb Taco Shells

Every now and then, I like to limit my carb intake, and lose some weight along the way. This is when I go on a salad and veggies frenzy. Then I crave all the food that I should not be craving and then this recipe happens...

This taco shells are made with cheese slices, melted in a non-stick pan and cooled down on a rack. They are delicious, they are low carb (which doesn't mean low calories, but lets not get into that)... This hits the spot and it is not too bad if you are on a low carb and feel like you've had enough healthy meals and need some indulgence this will do.

I paired the shells with some cooked chicken breast and sautéd onions and pepper. I made a tomato salsa and mashed an avocado into it. Then it is just the matter of building the tacos with some lettuce and layers of chicken, avocado and tomato salsa, I added some yogurt for some acidity instead of sour cream.

Think of it as a constructed salad in a cheese shell. Ultimately the cheese can be put into a muffin (upside down) form and cook in the over until brown, melted and cooled. Then filled the cheese cups with chicken or any other mix.
