Tomato Soup & Noodles

Tomato Soup & Noodles

One of my comfort soups. I mean it has three of my favourite ingredients, noodles, parmesan cheese and tomatoes. Nothing can go wrong on a bowl that screams EAT ME!!!

This recipe yields 4 portions.


12 big ripe tomatoes (wedged)

1 medium onion (chopped)

2 garlic cloves

6 cups chicken broth

2 cups of angel hair noodles

4 tablespoons of parmesan cheese

1/2 tablespoon of brown sugar

1/2 cup of olive oil

Salt & Pepper to taste

Basil leaves (to garnish)


1. In a tray drizzle olive oil, salt & pepper: to the tomatoes, onions and garlic and roast in the oven for 40 minutes on a medium high heat.

2. Keep the chicken broth warm once the vegetables are roasted add it to the broth and let simmer for 15 minutes.

3. Put the soup in a blender and return to the pot and slow simmer, add the noodles and turn the heat off and add the sugar.

4. Serve the soup in a bowl, sprinkle the a tablespoon of parmesan cheese, garnish with basil.

Oh mangiere!!!
