Thai Inspired Noodles

Refreshing Summer Noodle Salad with Mixed Noodles and Shrimp.

This recipe yields 2 portions.


Ingredients:

100g udon noodles

100g rice noodles

100g shirataki noodles

100g sugar peas (trimmed

)1 small zucchini (shredded)

½ cup Thai basil leaves (torn)

Quick-pickled cucumbers (see recipe below)

4 radishes (thinly sliced)

1 medium carrot (shredded)

200g shrimp (peeled and deveined)

Lime wedges (for serving)


For the Quick-Pickled Cucumbers:

½ cucumber (thinly sliced)

2 tablespoons rice vinegar

1 teaspoon sugar

Pinch of salt


For the Sauce:

2 tablespoons soy sauce

Juice of 1 lime

2 tablespoons mirin

2 tablespoons rice vinegar

1 tablespoon fish sauce

1 tablespoon sesame oil


Directions:

  1. Cook each type of noodle separately according to the package instructions. Rinse with cold water and set aside.

  2. Blanch the sugar peas in boiling water for 1-2 minutes until crisp-tender. Drain and rinse with cold water to cool. Cut them diagonally into bite-sized pieces.

  3. In a large mixing bowl, combine the cooked and cooled noodles, sugar peas, shredded zucchini, Thai basil leaves, quick-pickled cucumbers, sliced radishes, and shredded carrots. Toss gently to combine.

  4. In a separate pot, bring water to a boil and add the shrimp. Cook for 2-3 minutes until they turn opaque and are fully cooked. Drain and rinse under cold water to cool.

  5. Add the cooked shrimp to the noodle and vegetable mixture.

  6. In a small bowl, whisk together the soy sauce, lime juice, mirin, rice vinegar, fish sauce, and sesame oil until well combined. Pour the sauce over the noodle salad and toss gently to evenly coat everything.

  7. Serve the refreshing summer noodle salad with lime wedges on the side for an extra zesty kick.

Quick-Pickled Cucumbers:

  1. In a small bowl, combine the rice vinegar, sugar, and salt. Stir until the sugar and salt dissolve.

  2. Place the cucumber slices in a jar or bowl and pour the vinegar mixture over them. Let them sit for at least 15 minutes to allow the flavors to develop.
