Pearl Couscous Salad
Wholesome meal, pearl couscous, with tomatoes, cucumbers, red peppers, olives, feta cheese, toasted hazelnuts, toasted pumpkin seeds, and spinach... I’m happy gal! And basically that's the recipe, not much to it. As you can imagine this is very much inspired in the classic greek salad with feta and olives.
This recipe yields 4 portions.
Ingredients:
2 cups of pearl couscous
2 tablespoons of dry herb mix (oregano, thyme, sage, rosemary, basil, mint, dill and cilantro)
1 cup of cherry tomatoes (halved)
1 cup of cucumbers (chopped)
1/2 of red bell pepper (peeled, chopped and cooked)
1/2 cup of feta cheese (crumbled)
1/4 cup of toasted hazelnuts
1/4 cup toasted pumpkin seeds
2 cups of chopped spinach leaves
3 tablespoons of olive oil
1 lemon (zest & juice)
Salt & Pepper to taste
Directions:
Cook the pearl couscous as per package directions. Once done, and still a bit warm, add the herbs, 1 cup of the chopped spinach (reserve the other cup for later) olive oil and lemon zest, season with salt and pepper, mix well and let it cool down.
Once the couscous has cooled, add all the other ingredients (including the rest of the spinach), mix and serve.
Tips:
You could also add fresh herbs, instead of the spinach. I'm sure that would be a very nice flavour.
You could also add red onions (julienned) or shallots. I just don't like raw onions at all.
