Thai Chicken Glass Noodles

This another dish that came in my Asian gift box. Simple and light. Loved it! (Noodles, who doesn't?).

This recipe yields 2 portions.

200 gr. glass noodles

2 tablespoons of fish sauce

3 tablespoon of oyster sauce

250 gr. chicken fillet (sliced thinly)

1 cup of green onions (chopped)

2 tomatoes (wedged)

2 eggs (scrambled and made into a omelet, cut into strip)

2 cloves of garlic (mashed)

1 yellow onion (julienne)

1 tablespoon of sugar

Oil to cook.

1. In a bowl, add the raw noodle, boil water and pour over the glass noodles let them soak for 5 minutes and then drain.

2. In a non-stick pan add a bit of oil, and sauté the yellow onion and garlic, then add the chicken (cook until done) and sauces.

3. Add the the noodles, the omelet and sprinkle the green onion. Eat warm.
