Arayes is stuffed arabic bread with spiced meat, that is grilled or baked. And one of the most under-rated foods in the Middle East. This recipe hits the spot every single time.

This recipe yields 4 individual pies.

Ingredients:

200g. tablespoons of minced meat (raw)

1 onion (pureed)

1 bunch of parsley (finely chopped)

2 tablespoon of tomato paste

2 tablespoons of pesto

1 tablespoon of raw al hanout

1/2 tablespoon of Spanish paprika powder

Salt and pepper to taste

4 Lebanese flat bread

Directions:

1. Mix all ingredients together, homogeneously.

2. Spread the mix into the flat bread (thin layer) and bake for 10 minutes or until meat is fully cooked.

3. Serve warm with greens, salad and yogurt.

Tips:

1. Tapenade is also an option for an added flavour punch, with a bit of the fat and salty flavors it gives to the mixture.

2. Chopped cilantro is also great with the parsley.

3. Instead of pesto, pine nuts can be added to the meat mixture.
