Fried Bread filled with Chicken Salad
September is my month! My birthday month, and I told myself I will try my utmost best to post as many recipes as possible. I hope I can achieve this new goal.
One thing you all must know, I don't like wasting food, and many times in the kitchen it seems like you have no choice, things run out of their time and inevitably it goes to the waste, specially bread. Ah! but wait, there's more (just like in the infomercials on tv, hihihi)... :)
You can fresh-up some old bread by frying it on some butter (not the healthiest, but I never said it would be)...
Let's indulge, shall we?...
This recipe yields 4 fried pieces of bread to fill.
Ingredients:
8 slices of stale bread (crusts off and cut into round circles)
1 egg (beaten)
bread crumbs
1 stick of butter
2 tablespoon of frying oil
Directions:
1. Taking two slices and press the edges into each other until forming one patty.
2. The patty pass it through the egg wash and then through the bread crumbs.
3. In a frying pan, heat the butter and the oil, fry the bread on both sides until golden brown.
Tips:
1. Don't throw away the crusts of the bread, toast them in the oven and then put them in the food processor to make bread crumbs, or toas some Italian seasoning and toasted in the oven for home made croutons.
2. I just added store bought chicken salad, but of course anything goes.
