Lubi & Roz (Green Beans & Rice)
This is a Lebanese dish that as kid I use to hate, hate with devotion, why? I really don't remember, funny how we change through time. Also, so happy I gave up my fuzzy and very limited palate, I would have missed out on very much, not to mention how healthy it is to eat everything.
This recipe makes 4 portions.
Ingredients:
1 yellow onion (chopped)
4 ripe tomatoes (chopped)
1 garlic clove (mashed)
500 gr. Green Beans (washed, end cut and chopped)
300 gr. beef (any kind for stew)
3 tablespoon of noodles (broken up or the soup kind)
2 cups of jasmin rice (washed & rinsed)
olive oil
1 tablespoon of butter
Salt & Pepper
Directions:
1. In a pan add a bit of oil sauté onion, garlic, beef, once cooked add in the tomatoes, season with salt and pepper, reduce heat and cover cook from 40 minutes on low heat.
2. In another pan, fry the noodles in a bit of the oil and the butter, until light brown, add the rice and sauté for a minute and add 3 1/2 cups of water, cook like you would normally cook rice.
Tips:
1. This also makes for a very nice vegetarian dish, we eat it then like a cold side usually with Arabic bread.
